INDIAN DISHES for the holidays - POWER BALLS

The holidays are coming! I love them and I personally extend them, preparing for them from the first of December. Because gingerbread and gingerbread cookies, hot chocolate and teas with exotic spices warm up not only the body but also the soul on winter evenings! Similarly, the Indian holiday dessert, equally aromatic as our December pastries, which I treat my friends to during our December meetings. Yes, yes - Asia accompanies me even during Christmas! Here is a recipe that will transport you to Asia and introduce you to the holiday atmosphere. INGREDIENTS: 80g clarified butter 125 g chickpea flour 120 g cane sugar 25 g pistachios 1 teaspoon ground cardamom Coconut flakes for sprinkling Coconut milk for pouring (optional) MAKING 10-12 BALLS: grind into powder 120 g cane sugar Finely chop 25 g of pistachios, preferably lightly salted (or add a tiny pinch of salt to regular ones). heat 80 g of clarified butter in a pan When the butter is hot, slowly pour in 125g of sifted chickpea flour, stirring constantly. reduce the heat and mix vigorously on low until it thickens a little and the flour takes on a nutty smell and golden color. It won't take you more than a few minutes. Remove the pan from the heat and add ground cane sugar and a teaspoon of cardamom to the mixture. Mix everything well and put the pan back on the stove to heat up a little. Just be careful not to let the sugar caramelize, or the doughnuts will be too hard! Mix the pistachios into the dough and set aside to cool slightly. This is the hardest part ;). After fifteen minutes of cooling, it's time to form the balls. Scoop the dough with a spoon and roll it in your hands until you get the desired shape. Sprinkle the balls with coconut flakes and serve drizzled with coconut milk. Ready! Now that traveling is difficult, I try to invite as much of the Asian atmosphere as possible not only into my bathroom (after all, that's why I created Orientana!) but also into my kitchen. Indian laddu balls are perfect for this – they smell wonderfully of cardamom and pistachios and... taste great drizzled with my beloved coconut milk. And they're really easy to make, in one pan, in less than half an hour – it's just waiting for them to cool down that's hard, because you want to gobble them up right away... Laddu is a type of doughnut, usually made from one of the legume flours, but also wheat flour, and even coconut flakes – the latter variety was a traditional sweet given to warriors and travelers setting off on their journey before they set off. It was supposed to bring them luck and foretell the safe achievement of distant goals. Isn't that a beautiful omen for us too? A lighter version of donuts than coconut (and less caloric, although in the case of laddu it is not even appropriate to talk about calories!) is my favorite, prepared with chickpea flour. Besan laddu, because that is the name of the dessert I am presenting to you today, can boast, in addition to its high caloric value, also, to balance it out, high nutritional value. And although it cannot be eaten every day, because it is quite hard to digest, let's appreciate the high protein content in chickpea flour and the health benefits of pistachios, which are their second important ingredient. And actually the last one, because for flavor you only need cane sugar, cardamom and... that's it, not counting the fat in which Indian donuts are fried. In the classic version, it is clarified butter and I strongly encourage you to use it, because not only does it have a wonderful, buttery smell, but also a high smoking point and can be used by people who are dairy intolerant. However, laddu can also be fried in any other oil – as long as it is tasty, e.g. coconut. When guests arrive, instruct them not to go for the balls first. They are so sweet, it is better to save them for the grand finale of the sweet party. It will be a success, I guarantee! In India, laddus are so popular that you can even buy them frozen to fry up at home... But that would take away from the holiday spirit, wouldn't it?

GINGER, LEMONGRASS AND LEMON INFUSION AUTUMN TRIO FROM ASIA

Summer is just a memory now. It has become cold, we have returned to our usual, busy schedule… and, standing on the scales, we come to the conclusion that it is time to pay for our holiday nutritional sins ;). Unfortunately, the threat of the pandemic virus and autumn depression have not gone away with summer. What to do with all this? My answer is this – prepare the right herbs! And, as always with me, I prepare those proven ones from wonderful Asia. That's why today I have a recipe for a body-cleansing and vitality-boosting ginger, lemongrass and lemon infusion. Every woman in India knows it! And every Indian mother gives her child such a drink - for immunity, to improve mood, for better results in school - and for a bit of silence, because this drink is so delicious that, slightly sweetened, it successfully satisfies the child's constant need for dessert (and at least for a moment closes grumpy mouths;)). The base of the drink is ginger . Lots of ginger! The list of its health-promoting properties is very long. It opens with the sensational, but still awaiting wider research, ability to inhibit the development of cancer cells. Many studies have already confirmed that ginger relieves nausea and reduces inflammation of muscles and joints, and also regulates the functioning of the digestive system, acting antispasmodically and choleretic. It also improves blood supply to all tissues, which affects the well-being of not only the entire body, but also the brain, thanks to which it works much more efficiently - that is why after a glass of ginger infusion we concentrate easier and remember more, just like after a cup of strong coffee. We also add lemongrass to the infusion. It is responsible for its exotic taste. It has antibacterial properties and is a strong antioxidant, thanks to which it strengthens and rejuvenates the body. It contains a lot of vitamins, as well as folic acid, magnesium, zinc, copper, potassium, iron, phosphorus, which are very necessary for us girls... It also effectively treats digestive problems - it brings relief not only in the case of constipation or flatulence, but even stomach diseases! And what is important in today's gloomy times - it has a positive effect on the respiratory system and soothes a sore throat. Not to mention that it has a soothing effect in the case of muscle pain! It is worth remembering this in the flu season. Just like the fact that regularly sipping lemongrass infusion lowers blood pressure and... calms you down. The most well-known ingredient in our latitudes of the favorite drink of Indian women is lemon. It is known: it has a lot of vitamin C, has antioxidant and antiseptic properties - it is not without reason that we also add it to tea, not only when we have a cold. To make a delicious, strengthening infusion, you only need these three ingredients, but, like they do in Asia, it's worth going for a culinary freestyle. So to the base, consisting of a finger-sized ginger rhizome (you don't even have to peel it!), two lemongrass rhizomes and half a lemon (or lime, if you prefer more bitter flavors), add a large pinch of ground ginger or a spoonful of honey, according to your taste - here I recommend honeydew or buckwheat with non-obvious flavor notes. So how do you do it? As is my kitchen custom, quick and easy ;). Cut the lemongrass into two-centimetre pieces, chop or crush the ginger. Throw them into a pot and pour two cups of water. Cook for 10 minutes, then cool slightly and pour in freshly squeezed citrus juice. Add the additions, such as cardamom, licorice or a bit of cinnamon, at the end of cooking, and add the honey only when the infusion is a bit colder – remember that honey loses its healing properties at temperatures above 40 degrees. Drink the infusion warm or cold – the first version will warm up in a few minutes, and the second will be refreshing and a great substitute for plain water. Are you thinking about an autumn detox? Just don't go crazy - eat regularly and healthily, your body will manage on its own. But our ginger infusion will effectively help it!

MY METHOD - MEDITATION

It is healthy for the mind, fights stress, helps to calm down, improves concentration, increases life satisfaction… So much has been written and said about meditation that you know its benefits by heart. Meanwhile, it still seems to you that it is beyond your strength and that although you would like to learn it, you will never succeed? Here is how to start. Start slowly. Try for a few minutes a day, no more! And you don't have to sit in the lotus position or even cross-legged. It's better to take an upright position, but you can sit on a chair, or even lie down if the discomfort distracts you. Make sure that no one disturbs you, that it's relatively quiet around you and that you feel at ease. You can easily do without dim lights, candles and incense, although I recommend a scented fireplace - essential oils heated in it have a proven beneficial effect on the brain. For example, pine increases concentration, peppermint stimulates the mind, and lavender helps to relieve stress. All this to make meditation easier for you. START UNDER THE CARE OF... You can start with guided meditations. You can find them online or in phone apps. One of the most popular is Headspace, thanks to which you don't have to put in any special effort when learning meditation - a gentle voice will guide you through a few to a dozen minutes of meditation, suggesting what to focus your mind on, how to find sensations flowing from your body, hear voices from your surroundings. Yes, all this is already meditation! Because meditation is not about completely clearing and withdrawing the mind. That comes later, for the very advanced ;). At first, it is an attempt to notice phenomena that we usually simply do not have enough attention for – sounds, smells, sensations, and finally our own thoughts that appear and allowing them to flow freely – an attempt to perceive our mind as a clear sky, across which thoughts pass like clouds. Complicated? Only at the beginning! ...OR ALONE You can also try meditating without the help of a guide. Especially at the beginning, it requires a bit more effort, but it teaches you more independence. It also has the advantage that once you get the hang of it, you will be able to meditate whenever you want, whenever you find a quiet moment - even while walking or even while washing dishes. However, while you are learning, find a quiet place. Start by concentrating on your breath. If you can, close your eyes or focus on one point in the space in front of you – but without effort! Start breathing deeply, slowly and observe your inhalations and exhalations, as well as the accompanying sensations in your body. To increase your concentration, you can repeat in your mind: "I know that I am inhaling" and "I know that I am exhaling", place your hands on your ribs and feel them rise as you take in air and fall as you exhale. When thoughts appear, gently return your mind to observing your breath. And... that's it. The first few "lessons" of meditation look like this. And, I repeat, yes, this is already meditation! BREATHING INTO STEAM You can stop there and simply enjoy the increasingly easy way to enter a state of concentration. You can also try working with your breath. Sitting up straight, lengthen it gradually, counting to four with each inhale and six with each exhale. You can also try the popular “square breathing” in midfullness techniques. It consists of counting to four while inhaling, holding the air in your lungs, also counting to four, exhaling, counting to four again, and remaining breathless for four. Repeating such a cycle quickly stabilizes the mind and balances the work of the two hemispheres of the brain, which in the long run has wonderful effects on the entire body. That's all for starters. With time, everything will become more natural. And as a meditation teacher friend of mine recently advised me - when you sit down to meditate, have a notebook and a pencil with you. First of all, white clay consists of a natural mineral, aluminum silicate, which is extracted from rocks in mines. Kaolin clay is suitable for all skin types, thanks to the fact that it is anti-allergic and fully natural. It comes from the interior of the earth and is a natural product extracted from sedimentary rocks. In cosmetology, kaolin clay is used for the care of dry and sensitive skin, but due to its properties and its combination with appropriate plant extracts, it will be suitable for all skin types.
